VIN ËD POM Vin ëd Pom is a traditional technique of cofermenting wine with orchard fruits; a love story between the diversity of fruit, geology, geography, and the human hand in our Vermont landscape.
It's beguiling, she said, this homage to summertime. In the Tuscan countryside, a chilled glass of red Sangiovese with a ripe half peach macerating in it, speaks of hot days of summer sun, warm breezes, fruit hanging from the trees and vines, roses perfuming the air.
This classic Italian summertime drink was the inspiration for this cofermentation when we found ourselves with a rich bounty of peaches last August. We steeped the halved ripe peaches in a demijohn of just fermenting Marquette from the Vergennes vineyard and bottled when the time was right.
A soft sparkling red threaded through with the texture and perfume of the peaches.
