These are wines we do not produce annually, but may produce in the future when the circumstances allow.

Ti’quette is our name for old fashioned piquette, a light wine made from soaking the remaining seeds, stems and skins of a pressed wine. Ti’quette is a Quebecois diminiative for petite piquette.

It would follow that since piquette is a light rustic wine made from soaking the remaining seeds, stems and skins of a pressed wine with just a little bit of fermenting wine added to kick off a second fermentation, that it's meant to be consumed quickly. It's origins are popular, a wine made for the workers in the vineyards, something to quench the thirst but have a little something more than water.

Our approach to piquette is similar, except we wanted to know what would happen if you treat piquette with the same love and attention we do to our other wines.  The result is a sparkling wine that is on the wine side of a spritzer, and because we add back wine into the maceration, it is a little higher ABV and more stable.

Ti’Quette is refreshing with a light fine bubble that is great as an aperitif or as something charming with the rest of the meal. Pairs just about with everything! Especially a hot day!
