Rancio Sec is a dry, ancestral wine-making style hailing from the steep hills of south western Europe. This oxidative Solera of white wine, which goes back to the 2014 vintage, ages in glass demijohns, or bonbonnes, exposed to all the summer elements in our rose garden, just like in the light-kissed rancio sec tradition, then returns to the cool cellar for our snowy winters. The resulting oxidative wine, not unlike Sherry, is nutty, floral, spicy and taste of the sun.
We love this wine as an aperitif.

La Selva means forest or jungle, and this vineyard, on clay, limestone, and shale, is described by the wild flora and fauna that create a certain magic in the vines.

AGRICULTURE / regenerative, practicing biodynamic, forest edge ecology, rotational grazing
VINEYARD LIFE / purple aster, daisy fleabane, wild mint, golden rod, honeysuckle, queen anne's lace, and wild rose
MICROCLIMATE / hot, humid summers with temperatures moderated by Lake Champlain only a 1000 feet from the vineyard. Zero slope but generally good drainage keep the vineyard from too much humidity. Cold, partly cloudy winters with only a little snow.
